The Pub is owned by The Shamrocks & Edelweiss Corporation. The corporation acquired the business on August 9, 2002 and named it Dempsey's Brewery, Pub & Restaurant. The Corporation is essentially family owned. Bill and Maria Dempsey (II), comprise the board of directors. The General Manager, Brew master & Bagpipe Major is Bill Dempsey (III). We are all dedicated to developing the best restaurant in Watertown. That is our goal and will consistently remain focused on it.

The "Pub" is situated in a refurbished warehouse in "Uptown" Watertown in the main business area of the old town. We are part of a number of business owners transforming the older "Downtown" into a newer "Uptown". We think you will like what our General Manager has accomplished in that regard. We are a little hard to find and if that is the case please refer to the "Contact us" link on our home page. While we may just be "hard to find" we sincerely hope you will agree that it was worth finding.

The unique atmosphere throughout the Pub is in a Celtic style décor with an array of flags of the Seven Celtic Nations as well as many others. There are swords and shields from days long gone by. The walls are decorated with Tartan cloths depicting Scottish family clans and so much more. A forty-foot mural of Dempsey' s Castle in Ireland decorates an entire wall! A warm and cozy fireplace sets the stage for pleasant conversations in the lounge. This was our General Manager's dream, that he designed, and made it come to life.

Our General Manager (Bill Dempsey III), in addition to being our Brew master, was also named the South Dakota Champion Bagpiper at one of the recent competitions. Bill is also the founder and Pipe Major of the Glacial Lakes Marching Band. He has been known to play a few tunes on request.
